Halibut with Cilantro, Lime, and Garlic

Dreaming of a vacation in warm weather, maybe lying on the beach in Mexico? This cilantro-lime halibut will have you feeling like you are right in the Caribbean—with a swimsuit-ready body in no time. This halibut is so low in calories and rich in protein, it’s a perfect meal as a part of your weight-loss plan.

Nonstick cooking spray

3 (4-ounce) halibut fillets

½ cup white wine

¼ cup chopped fresh cilantro

Juice of 1 lime

1 tablespoon extra-virgin olive oil

2 teaspoons minced garlic

1 Preheat the oven to 400°F. Coat a 9-by-13-inch baking dish with cooking spray.

2 Place the halibut fillets in the baking dish.

3 In a small bowl, whisk together the wine, cilantro, lime juice, olive oil, and garlic. Pour this dressing over the fillets.

4 Bake for 12 to 15 minutes, or until the fish flakes easily with a fork, and serve.
