Low-Carb Chocolate Mousse

PREP: 10 MINUTES, PLUS AT LEAST 2 HOURS TO CHILL / TOTAL: 2 HOURS, 10 MINUTES

This creamy, rich chocolate mousse will transport you to heaven. You truly can still enjoy dessert without all the added sugar since this recipe requires only stevia powder to sweeten it. The chia seeds are used to help the mixture thicken naturally without traditional ingredients like heavy whipped cream. Topping the finished mousse with fresh raspberries adds a pop of rich color and a tangy finish.

1 cup low-fat ricotta cheese

1 cup low-fat milk

1 tablespoon unsweetened cocoa powder

1 tablespoon chia seeds

2 teaspoons stevia powder

½ teaspoon vanilla extract

1 cup raspberries

1 In a blender, blend on medium speed to combine the ricotta, milk, cocoa powder, chia seeds, stevia, and vanilla until well blended and very smooth.

2 Divide the mousse evenly among 4 small serving glasses.

3 Refrigerate for at least 2 hours to thicken, or overnight for best results.

4 Top each glass with ¼ cup of fresh raspberries and serve.
